The dough is stretched by hand, brushed with a bright tomato sauce we season in house, then covered with real mozzarella and a full layer of pepperoni. In the oven the cheese blisters, the pepperoni curls and releases its spice into the cheese, and the base finishes crisp underneath with a soft, chewy crust around the rim.
